Spiced Apple Bites

This week saw spice week on The Great British Bake Off and I had to put my thinking hat on. As I had a couple of sorry looking apples I decided I would bake some cakes using them.

I say cakes, but these are more of a banana bread consistency. I deliberately didn't put too much sugar in as I felt the sweetness of the apple would balance out the bites. If you are looking for more of a cake style cupcake then you will need this caramel apple cake recipe.


I am finding that baking along with Bake Off is not having the best effect on my waistline, so decided to make these spiced apple bites as healthy as I could. I cut down the sugar and used margarine instead of butter. Personally, I like having them in their own little case rather than a slice of loaf as it means I should eat less.

Spiced Apple Bites

  • 4oz self raising flour
  • 3 small apples, peeled and grated
  • 2tsp cinnamon
  • 2tsp ground ginger
  • 3oz caster sugar
  • 3oz margarine
  • 2 medium eggs
  1. Pre heat the oven to 180℃
  2. Mix the margaine and sugar together.
  3. Add the flour, eggs, cinnamon and ginger.
  4. Peel the apples and then grate. Take out any excess water by pressing down with kitchen towel.
  5. Add to the rest of the mixture and stir well.
  6. Divide the mixture between 10 cake cases and bake until a skewer comes out clean.

    The boys were happy to have them as an after school snack so that was good too!
