If you haven't noticed I have a thing about raspberries and lemon. One of my popular recipes on the blog is this lemon cupcake recipe.
I also have a lovely recipe for a raspberry and lemon cheesecake.
Today, however, I decided to add passionfruit into the mix which worked really well.
I was all set for this to be a baking disaster as I forgot to add cornflour and white wine vinegar to my meringue. Luckily it didn't seem to make a difference, but I will add it to my ingredients list as it was meant to be there!
I didn't have any fancy tin for baking my meringue. I just covered a baking tray with grease proof paper and spread it out and it worked fine. Possibly I should have spread my lemon curd more evenly as it was a bit thick in certain places. Either way, there were no grumbles from my boys as they tucked in and added some extra raspberries.
Lemon Curd, Passion Fruit And Raspberry Roulade

For The Meringue
- 4 egg whites
- 250g caster sugar
- 1tsp cornflour
- 1tsp white wine vinegar
- 1 tub of fresh raspberries - some to put inside the roulade and some to accompany.
- lemon curd
- 2 passion fruit
- 150ml of double cream
For The Filling
- Pre heat the oven to 190℃
- Whist the egg whites and slowly add the caster sugar. Do the holding it over small child head trick to ensure it is ready! (My youngest was very relieved when he wasn't covered in it.
- Line a baking tray with grease proof paper and spread the mixture evenly.
- Bake for 10 minutes and then turn the heat to 150 ℃ and bake for another 5 minutes.
- Flip it out onto another piece of grease proof paper and allow to cool.
- When cool spread with lemon curd.
- Whip the cream and spread over the meringue.
- Then scoop out 2 passion fruit and sprinkle over some of the raspberries.
- Roll using the long edge.
I probably wouldn't have won any prizes for it as a technical challenge but the boys scoffed the lot, so I take that as a winning bake.

I love the flavours you have used, I bet they are delicious along with the cream and meringue. I was trying to decide whether to make a roulade or not and I was toying with using passion fruit. But then I remembered I was trying to be good and if I made one I would have eaten the whole thing haha.
