Why I have never thought of making this before is beyond me. One of my favourite ice creams is Ben and Jerry's Cookie Dough. The problem is it is so expensive we only ever buy it when it is on special offer. My brainwave hit me when I was making no egg gingerbread with the boys.

Instead of throwing the leftovers away, I chopped the dough into small chunks.


I then got some vanilla ice cream out of the freezer and let it soften. Next I mixed the dough and some chocolate chips into the vanilla ice cream before putting it back in the freezer to harden.



A fantastic use for any left over cookie dough. What is your favourite ice cream flavour?
