A Strong Coffee Ice Cream


This ice cream is seriously good. The downside is it must have a serious number of calories! The recipe came with January's Kopi Coffee Club and has made me wonder why I don't make more coffee flavoured food! I have adapted it slightly as I am still none the wiser about what corn syrup is. I googled it and it told me that golden syrup would be fine. So here is what I did:

Ingredients:
50g Kopi Java Jampit ground coffee
150g granulated sugar
600ml whole milk
350ml thick cream
1 1/2 tablespoon of cornstarch
3 tbsp cream cheese
1/8 tsp salt
3 tbsp golden syrup


1. Whisk salt and cream cheese together in a bowl
2. Mix 2 tbsp milk with the cornstarch and put to one side





3. Heat the cream, sugar, golden syrup, and milk and boil on a medium heat for 3 1/2 minutes 

4. Take off the heat and add the coffee










5. Strain, add the cornflour and re heat for a minute whilst whisking. stir into the cream cheese









6. Pour into a freezer bag and put in a bowl of ice water for half an hour. Whisk again.

7. Freeze for at least 5 hours











Kopi Coffee Club deliver coffee to your door and you can buy it as a one off delivery or via a subscription. As it is a gourmet coffee, it comes at a premium price. However, it can be made cheaper by purchasing a longer subscription. You could tell the taste difference from a supermarket brand as to me it tasted smokey. If I was a connoisseur I would describe it as having a blend of dark chocolate, lavender and liquorice - I read this on the information card!

I was given a months trial of the club (250g coffee and a information card) for the purpose of this review, but the opinions contained here are my own.
