These coconut and lime prawn skewers are light and refreshing and a perfect addition to your summer BBQ's.
BBQ season is here and it is time to eat our own weight in red meat. Or maybe not! Whilst I love the odd burger and hot dog, one of my favourite things to cook on the barbie is prawns. These coconut and lime prawn skewers are super simple to make and taste delicious.
If you haven't invested in metal skewers yet, now is the time. They are so much easier than having to remember to soak wooden ones. If its just a small gathering they are perfect.
This recipe uses Vita Coco Coconut oil. I first used it in a walnut cake last year and have been hooked ever since. I always use it when I am cooking curries and I prefer it on my toast to margarine. It gives my dairy free pineapple pancake recipe a little lift too. It does make me laugh when I see it in the beauty aisle as well as cooking, but it really is that versatile!
Coconut And Lime Prawn Skewers
- 1 tbsp Vita Coco Coconut Oil
- 2 limes
- 165g prawns
- 1tbsp brown sugar
- Take the zest of 1 lime and add it to the bowl with coconut oil and sugar.
- Mix in the prawns making sure they are all coated.
- Place the prawns onto a skewer and BBQ for a couple of minutes on each side.
- squeeze the juice of the remaining limes over the prawns and garnish with fresh herbs.
