Seriously Good BLT Bites

I'm not kidding when I say these BLT bites are seriously good! Heinz have a fantastic competition running at the moment, challenging foodies to develop a tasty mouthful using their seriously good mayonnaise.

I watch a LOT of cookery programs. Often the top chefs tell you that it is the quality of the products that is important in a dish. They are right. I tested a fair few combinations for this recipe. Well saying something is seriously good is quite a claim so I wanted to be right. I tried unsmoked bacon, cherry tomatoes, sundried tomatoes and croutons. However, when you have the best ingredients then half of job is done for you. So to make some of my seriously good BLT bites, you will need:

Smoked bacon lardons
Vine ripened tomatoes
Iceberg lettuce 
Heinz [Seriously] Good Mayonnaise
White bread
1 medium egg seasoned with pepper


Start by whisking an egg and season with pepper. Use a small cookie cutter to cut out some bread and then dip the bread in the egg before frying until brown on each side.

Meanwhile heat the smoked bacon lardons.

When the eggy bread is cooked place on a spoon and add some Heinz [Seriously] Good Mayonnaise.


Finely slice some iceberg lettuce. Add this on top of the mayonnaise. Add 3 bacon lardons and 3 pieces of diced tomato to each spoon. 

There you have a fantastic tasty mouthful. However, you might want to make it into a meal by serving it inbetween two slices of eggy bread instead.
