Well it is back to school time and Welsh Lamb have sent me a lovely shoulder of lamb to create a back to school meal. I don't know about you, but I find the hours between 3-5 extremely hetic with after school clubs and lots of rushing around. This is why I opted for a slow cooked recipe. Super simple to prepare first thing in the morning and leave it to cook all day. This can be done as a one pot recipe, although I chose to add some steamed brocolli and peas to the dish.
Lamb makes a great meal for school children as it is high in iron needed for healthy blood. Protein is also important for growth and with the winter months coming, zinc can help the immune system.
Ingredients for my Slow Cooked Lamb One Pot With Rosemary And Garlic.
1kg Lamb shoulder
4 carrots peeled and chopped
1 red onion
2 cloves garlic chopped
4 sprigs of rosemary
250ml red wine
1 lamb oxo cube and 1 pint of water
3 tbsp plain flour
New potatoes
Cover the base of the slow cooker with your new potatoes. Some may need in half to make them roughly the same size. Peel and chop the carrots and add these along with the garlic, red onion and rosemary.
Lie the lamb on top and add the red wine and lamb stock. Cook on low for 6-8hrs. Thicken the sauce by adding the flour.
Before serving remove the rosemary sprigs. Serve with some steamed green vegetables.
The great thing about this meal is that you can also freeze any leftovers making yet another easy back to school meal.
