For the Marinade:
4 chicken breasts diced
1 small onion diced
1 clove of garlic chopped
1 inch of ginger chopped
2tbsp soy sauce
1tsp corriander
2tsp brown sugar
Juice of half a lemon
1tbsp of vegetable oil.
Leave overnight to marinade. If you are having a BBQ then place on skwekers. Alternatively fry in a non stick pan.
For the Peanut Sauce:
300ml coconut milk
4tbsp Whole Earth Peanut Butter
Juice of half a lemon
Heat the ingredients together in a pan.
Either serve drizzled over the chicken or in individual dipping bowls. This is a great recipe and if you don't like peanuts then it tasted pretty good without the sauce.
So what was inside this months Degustabox?
Whole Earth Peanut Butter: I liked the seeds in this peanut butter
Beet it: Not a product I really need. I shall see if my husband wants to try it as he training for a half marathon.
Melba Thins: I had forgotten how much I like Melba toast as a snack. I shall be buying these in the future.
Schwartz Flavour Shots: We have tried various shots in previous boxes. This time we had a curry one that we enjoyed.
Lily O'Brien's: I was going to share these with the boys until I opened them and realised how good they were! I begrudgingly shared them with my husband instead.
American Muffin Company: I received the brownie bites. They were nice, but more cake like than brownies.
Peanut Hottie: Makes a change to hot chocolate. I like peanuts so I liked the Peanut Hottie drink.
Laimon Fresh: Fantastic virgin Mojito flavoured drink.
Jack Link's: Not my kind of snack bar.
