Eton Mess Whoopie Pies

Recently I tried making chocolate and marshmallow whoopie pies for the first time. Big man liked them so I thought I would make some eton mess style ones.

For the filling I used fresh strawberries and marshmallow fluff. For the top, another blob of marshmallow fluff and some Dr Oetker Eton mess sprinkles.

To make 12 whoopie pies (24 halves) you need:

  • 350g plain flour
  • 1 teaspoon bicarbonate of soda
  • 1/4 teaspoon salt
  • 200g caster sugar
  • 1 egg
  • 125ml vegetable oil
  • 1 teaspoon vanilla extract 
  • A sprinkling of ground vanilla pods
  • 180ml milk



You just mix all the ingredients together and then place it in blobs on a piece of grease proof paper on a baking tray.

These were then put in an oven at 180C for 12-15 minutes. When cooled I filled them with marshmallow fluff and strawberries.

I then put a blob of fluff on the top and some eton mess sprinkles.

Big man liked them but did think the chocolate ones were better. I think he has my love of chocolate though!
