Mojito Chicken Skewers


The sun is out and so is the BBQ. Cooking outside on a cool summer evening has to beat cooking indoors. As you may already know, after spending a week in Spain relaxing with a Mojito in my hand, I came home eager to learn how to make one. Therefore when John Lewis asked if I would be interested in coming up with a recipe for the BBQ for a competition they are running, I knew exactly what I was going to make. I don't normally boast, but I suprised myself with how good they tasted. So here is my recipe for Moijto Chicken skewers

Ingredients - serves 4

800g of chicken breast chopped into chunks
1cm cube of ginger chopped
1/2 red chili chopped
2 cloves of garlic chopped
Juice of 2 limes
2 tbsp of Golden syrup
30ml white rum (optional)

Make up the marinade using the ingredients above.



Marinate the chicken over night.


Put onto skewers and then onto the BBQ. It couldn't be easier!


Serve with rice and salad and a Mojito on the side

      I know! Maybe I need to branch out on other cocktails :-) I have shocked myself with how nice this tastes!
