For me, the summer is all about having fun outside with my boys. We end up having a lot of picnics. Whilst cheese sandwiches are nice, day in day out they get a bit boring. I often make sausage rolls and picnic rolls, so for the BritMums' Summer Turkey Recipe Challenge I decided to use turkey mince rather than sausage meat. It is a quick and easy recipe. Preparation time is 5-10 minutes and the cooking time is dependenent on how big you make your rolls.
Ingredients
500g turkey mince
2 grated apples
1 slice of bread made into bread crumbs
1/2 an onion diced
100g of grated cheese
2 tbs of tomato puree
1 block of puff pastry
Start by mixing all your ingredients (except the puff pastry) in a bowl.
Roll the puff pastry into a rectangle and add the filling
Pinch the pastry to seal the roll. Turn over, cut to the size of rolls you want and add slits. Place on a baking tray and cook in a pre heated oven 220°C.
These took about 25 minutes to cook.
Perfect for a picnic and if the weather continues to be rubbish, it tastes lovely eaten warm with some baked beans too!
