There is something about the combination of chocolate and peanuts in a Snickers bar that I just love. The sweet versus salty combination. Having been on holiday it seems like forever since I have been doing any baking. Whilst wandering around the supermarket the other day I saw they were selling a multipack for a pound so I decided that Snickers cupcakes would be on this weeks menu.
I decided that I would use crunchy peanut butter as the main fat content to my cupcakes and add in some chocolate chips to compliment this.
For the frosting I used smooth peanut butter again as the main fat content. The frosting was thicker than usual but had a fantastic flavour. Melted chocolate and a slice of Snickers bar added to the luxurious topping.
Snickers Cupcakes
Makes 10 cupcakes
For the cupcakes
- 3oz crunchy peanut butter
- 1oz butter
- 3oz caster sugar caster sugar
- 2 eggs
- 4 oz self raising flour
- 50g chocolate chips
For the frosting
- 8oz icing sugar
- 3oz smooth peanut butter
- 1oz butter
To decorate
- 25g chocolate to drizzle
- 2 Snickers bars
- Preheat the oven to 180C.
- Mix all the cake ingredients together.
- Divide the mixture between 10 cupcake cases. I find using an ice cream scoop helps to make them even.
- Bake until a skewer comes out clean. Allow to cool before adding the frosting.
- To make the peanut frosting mix the icing sugar, butter and peanut butter together using an electric whisk.
- Pipe this onto each cupcake. The mixture is quite stiff.
- Melt some chocolate and drizzle on over the cupcakes.
- Slice a small chunk of Snickers bar and add this to the top.
